Instructions
- Preheat oven:
- Preheat oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper leaving an overhang for easy removal.
- Mix dry ingredients:
- In a large bowl combine oats flour baking soda salt cinnamon nutmeg ginger and cloves. Mix well.
- Mix wet ingredients:
- In a separate bowl whisk together pumpkin puree eggs brown sugar maple syrup melted butter and vanilla extract until smooth.
- Combine and fold in add-ins:
- Add wet ingredients to the dry ingredients and mix until just combined. Fold in nuts or chocolate chips or raisins if using.
- Prepare batter:
- Spread the batter evenly in the prepared pan. Smooth the top with a spatula.
- Bake:
- Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
- Cool and slice:
- Let cool completely in the pan before lifting out and slicing into bars.
