# How to Make:
- Preheat the oven to 375°F.
- Lightly grease a baking dish large enough to hold the peppers upright.
- Bring a large pot of salted water to a boil. Blanch hollowed bell peppers for 3 minutes, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2 minutes until fragrant.
- Add ground turkey to the skillet. Cook, stirring frequently, until no longer pink, about 5 minutes.
- Stir in grated carrot and diced zucchini. Cook for 3 to 4 minutes until softened.
- Add cooked rice, drained diced tomatoes, oregano, basil, smoked paprika, salt, and black pepper. Cook for 2 minutes, stirring to combine.
- Remove skillet from heat. Stir in half of the shredded cheese.
- Spoon the filling evenly into each bell pepper and place them upright in the baking dish.
- Sprinkle the remaining cheese atop the stuffed peppers.
- Cover loosely with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Allow stuffed peppers to rest for 5 minutes. Garnish with chopped fresh parsley if desired before serving warm.
