Mediterranean Baked Garlic Herb (Printable Version)

# Ingredient List:

01 - 12 ounces penne or rigatoni
02 - 1 tablespoon olive oil

# How to Make:

01 - Preheat oven to 400°F. Lightly grease a large baking dish.
02 - Bring a large pot of salted water to a boil. Cook pasta until just al dente, approximately 2 minutes less than package directions. Drain and toss with 1 tablespoon olive oil to prevent sticking.
03 - Heat a nonstick skillet over medium heat. Sauté chopped onion for 3 minutes until softened. Add minced garlic, diced red bell pepper, and sliced sun-dried tomatoes; cook for an additional 2 to 3 minutes.
04 - Add canned chopped tomatoes, dried oregano, dried basil, and chili flakes (if using) to the skillet. Season with salt and freshly ground black pepper. Simmer gently for 5 minutes to meld flavors.
05 - Stir in baby spinach and cook until wilted, roughly 1 minute.
06 - In a large bowl, mix the drained pasta with the prepared sauce and half of the crumbled feta cheese until well combined.
07 - Transfer the pasta mixture into the greased baking dish. Sprinkle the remaining feta and grated Parmesan evenly over the top.
08 - Bake in the preheated oven for 20 minutes until the top is golden and bubbling.
09 - Allow to rest for 5 minutes before serving. Garnish with chopped fresh parsley or basil and serve with lemon wedges if desired.
