01 - 2 lbs beef chuck, cut into 1½-inch cubes

# How to Make:
01 - Set the Instant Pot to Sauté mode. Add vegetable oil and brown beef cubes in batches, approximately 3–4 minutes each. Remove and set aside.
02 - Add chopped onion, sliced celery, and minced garlic to the pot. Sauté for 2–3 minutes until softened.
03 - Stir in tomato paste and cook for 1 minute to deepen flavor.
04 - Return browned beef to the pot. Add carrots, parsnips, potatoes, diced tomatoes with juice, beef broth, thyme, rosemary, bay leaves, salt, and black pepper.
05 - Stir well, scraping the bottom to lift any browned bits for enhanced flavor.
06 - Secure lid and seal valve. Cook on Manual/Pressure Cook at high pressure for 35 minutes.
07 - Allow natural pressure release for 10 minutes, then carefully perform a quick-release to release remaining pressure.
08 - Mix cornstarch with cold water to create a slurry. Set Instant Pot to Sauté, stir in slurry, and simmer 2–3 minutes until thickened.
09 - Remove bay leaves and adjust salt and pepper to taste.
10 - Serve hot, garnished with chopped fresh parsley if desired.
